Maintains and demonstrates complete knowledge of food and beverage and service standards including allergen information. Provides personalized service for guests and creates a work environment of teamwork and lateral service amongst Ladies and Gentlemen. Essential Duties
- Provides luxury food and beverage service to guests in a courteous and professional manner
- Anticipates the needs of guests and Ladies and Gentlemen by ensuring all supplies are readily available before and during service, maintaining a clean, safe, and accident-free environment, and immediately responding to the needs of all guests and fellow Ladies and Gentlemen
- Partners with Food and Beverage leadership to ensure adherence to sanitation and cleaning plans throughout all venue inspections and proper preparation for internal and official Public Health and cleanliness
- Ensures compliance with Public Health and all Safety and Labor Regulations
- Welcome guests as they arrive to the venue, providing a gracious and friendly introduction to the dining experience with a focus on the Three Steps of Service and Forbes Standards. Escorts guests to their tables, ensuring their comfort and satisfaction.
- Manages dining reservations. Maintains and accurate record of the reservations, seating preferences, and special requests. Utilizes reservation software effectively to optimize table assignments and accommodate guests’ preferences.
- Establish and maintain a strong relationship with guests, attending to their needs and preferences throughout their dining experience.
- Organize and manage table allocations to optimize seating capacity, taking into consideration the flow of service. Coordinate with the Servers and Server Assistants to ensure smooth transitions between seatings.
- Maintains a waitlist, if necessary, during peak times and efficiently manages the wait times for guests. Keeps guests informed about their estimated wait times and engages with them with any available food and beverage.
- Provides guests with information about daily specials and featured items. Actively engages in upselling to enhance the guest experience and contribute to revenue generation.
- Collaborates with the restaurant teams to ensure the restaurants’ standards are maintained at a high level, coordinating lighting, music, and décor to create a luxurious and welcoming atmosphere.
- Assists management in monitoring and ensuring compliance with restaurant policies, procedures, and safety regulations.
- Updates menus and makes sure menu covers and menus are clean and presentable at all times.
Qualifications
- Valid Standards of Training, Certification and Watchkeeping for Seafarers (STCW) and flag certification for the duration of the contract and appropriate to position
- WSET Level 2, Court of Master Sommeliers Introductory or equivalent certification in beverage knowledge
- Previous Maître d’ or Restaurant Manager experience in a five-star restaurant or onboard a luxury cruise restaurant environment
- Superior knowledge and experience in Public Health rules and regulations related to USPH and HACCP
- Excellent working knowledge of food, beverage (wine, beers, spirits, cocktails, coffee, tea) and international cuisine
